OUR BREWERIES

Taiyo Shuzo Brewery

Taiyo Shuzo brewery is located in Murakami in the Niigata prefecture. Niigata Prefecture is the third largest sake manufacturer in the world, with more rice being harvested there than anywhere else in Japan with the exception of Hokkaido in the north. Of special note is Gohyakumanguko rice, which is harvested in the home of Taiyo Shuzo, Murakami.

In 1945 14 local Kura (breweries) merged with the oldest having been operating since 1635 AD. The Toji (Master Brewer) of Taiyo Shuzo is Masaru San who was designated as Niigata-no-meiko, Niigata’s Master Craftsman by the governor of Niigata. Both Taiyo Shuzo and Masaru San are well-accomplished, winning 11 gold medals at the largest and most acknowledged Sake competition in Japan, the National New Sake Awards, as well as being awarded the Grand Prize in the Junmai Ginjo category.

Fujinishiki Brewery

Fujinishiki Brewery has been brewing sake since 1688. Nestled at the base of Mt. Fuji, the brewery benefits from the mountain’s pristine snow melt. This water, naturally filtered through layers of earth before emerging as a crystal-clear spring, provides the foundation for Hiro Sake’s fresh and refined taste.

Across 18 generations and over 800 years, the brewery has refined its craft, passing down techniques that continue to evolve in pursuit of exceptional depth and complexity. Beyond the finest ingredients and centuries-old techniques, it is the passion of the Fujinishiki team that makes Hiro Sake truly special. From the careful cultivation of rice to the final drop poured, their dedication and sincerity infuse every bottle, ensuring that each sip brings a moment of joy to those who enjoy it.

Lavender Honey Syrup (makes ~8 oz):
  • 1/2 cup honey
  • 1/2 cup hot water
  • 1 tsp culinary dried lavender

Steep lavender in hot water for 10 min, then strain. Mix with honey until smooth. Cool before using.

Instructions:

Dry shake (no ice) all ingredients vigorously for 15 seconds to emulsify the egg white. Add ice and shake again until well chilled. Double strain into a coupe or Nick & Nora glass.
